The Fresh Collective has won the catering tender for Museums Victoria and chef Khanh Nguyen will become an events ambassador for Melbourne Museum.

The partnership will see The Fresh Collective and Nguyen collaborate on custom event experiences with the chef curating menus exclusively for Melbourne Museum.

The Fresh Collective COO, Carl Contractor, said the successful bid will mark the beginning of a dynamic partnership with Nguyen. 

“Together, we look forward to continuing to create exceptional hospitality experiences and shaping an unforgettable part of Melbourne’s cultural landscape,” he said.

Nguyen’s menus will be available for an array of events from a dozen to 1000 guests including private functions, corporates and weddings with cocktail and seated menus on offer.

“It is an honour to partner with The Fresh Collective to deliver menus at one of the most magnificent venues in Melbourne,” Nguyen said.

“I’m looking forward to working with Fresh Collective to curate events and experiences that redefine the standards, leaving guests with unforgettable memories.

“At Melbourne Museum, I’m eager to revisit my South East Asian culinary roots, infusing the menu with the vibrant flavours of Vietnam, Thailand and Malaysia.”

Cocktail dishes include a baked butter puffed pastry tart with vegemite curry and pickled red onion and hiramasa kingfish with jalapeno, wasabi and fried potato.

The seated menu includes aged Brisbane Valley mighty quail with radicchio, egg yolk and rosella flower, Humpty Doo barramundi with pumpkin noodles and sunrise lime, and slow-cooked Gundagai lamb with native curry and witlof.
