Hot venue: Salary Man

Dedes Group has made a departure from its traditional waterfront venues with the opening of Salary Man, a new Japanese-inspired 100 seater restaurant in the heart of Surry Hills.

With a mural by artist Diemme and interiors by Paul Kelly, this sleek space has an open kitchen, polished concrete floors and, in a totally new thing for Sydney, a taiyaki machine.

Situated near a window that will open on the street, the taiyaki machine will be turning out hot Japanese waffles with sweet and savoury fillings in the coming weeks.

Salary Man team

The kitchen team is headed up by Flying Fish alumni executive chef Stephen Seckold, head chef Corey Reid and pastry chef-turned-mixologist Marzio Manzini.

With a menu that changes daily according to season and whim, diners can expect a selection of dishes such as Robata grilled Lady Elliot Island bugs served in lettuce cups with brown butter emulsion and Saikou salmon pastrami with tempura shallots and pickled mustard seed, along with rice and ramen bowls, a vast selection of wines (many of which are organic), cocktails and desserts such as a feather weight lemon tart with buttermilk icecream.

The venue is available for private hire and can cater to 100 seated and 120 standing.

Salary Man is located at 52-54 Albion St, Surry Hills NSW.
