Headed by General Manager Jason Ratcliffe, the new modern Chinese restaurant seats over 250 guests over two levels and includes a dedicated bar and cocktail area and four private entertaining rooms.

Ratcliffe said, “China Republic brings together the ancient cooking traditions and architectural designs of China with modern presentation and service, creating a dining experience quite unlike any other in Sydney.

“Each dish on the extensive menu emphasises the quality sourced produce and extensive credentials and experience behind our Beijing trained Executive Chef and Co-owner Mei Sheng Yu, aka ‘Chef Mayson Yu’ and his team of three head chefs.”

A main feature of the two-level restaurant is two purpose-built Peking duck ovens. When fired-up, the ovens can roast over 20 ducks an hour – that’s more ducks at once than any restaurant in Sydney – and diners may even get to enjoy a duck-on-fire display on special occasions, further adding to the theatre of the China Republic dining experience.

As per Chinese tradition, the golden brown Peking duck is carved for the table and served with ten side dishes, including duck pancakes and sweet soya bean paste.

A living goldfish pond is carved along the barrier of an elevated show kitchen, giving diners a front row seat to observe the skills of the kitchen staff.

The second level features four private dining rooms each complete with a bamboo handcrafted scale model of the Forbidden City imperial palace. Each privately sectioned room seats between eight and 16 guests and is an ideal setting for business meetings, private parties or celebrations. Additional communal seating divided by a timber display of traditional Chinese teapots adds to the versatility of the upper level space, where up to 60 people can be seated comfortably for an event.
