Merivale’s American BBQ restaurant Papi Chulo celebrated its first birthday this week.
Chefs Christopher Hogarth and Patrick Friesen smoke succulent marinated meats over wood for at least six hours to create an intense pit barbeque flavour that’s straight from the American Deep South.
But that’s not the end of their love affair with the Americas. They also kick in some classic South American dishes like ceviche and empanadas, alongside perfectly charred seafood, fresh summer salads and a killer cocktail list.
