Guests were among the first to sample head chef Anderson Dos Santos’ new canapé menu featuring; blue cheese shortbread with spiced pear jam; chicken liver pate with port wine jelly and brioche crisps; fig bresaola with taleggio cheese, cured ocean trout with beetroot jelly and lime crème fraîche; salt and pepper tofu with avocado and bean sprouts; and ‘sliders’ with grilled sirloin, quail egg and crisp pancetta. Part of the Trippas White Group, The Pavilion boasts a prime location in the middle of Sydney’s cultural hub and is within close proximity to other iconic Trippas White Group venues such as the Art Gallery of NSW, The Mint on historic Macquarie Street and Botanic Gardens Restaurant.

“One of the things that makes The Pavilion so unique is its curved architecture which allows uninterrupted sightlines from any point throughout the venue,” said Trippas White group managing director, Brien Trippas.
