As one of the youngest chefs in Australia to be awarded a Chefs Hat, Viles’ career highlights also include his regular appearances on Channel Nine’s ‘Fresh’ program and stages with internationally renowned chefs Charlie Trotter, Marcus Samuelsson, Alain Ducasse and Hans Hass of Tantris in Munich. Chef Viles is exclusively designing a ‘100 mile menu’ for Darling Island Wharf, which sources ingredients from within a 100-mile radius.

Chef Viles comes to Sydney after working on the innovative No35 restaurant project in Melbourne. Chef Viles is renowned for not only his contemporary approach to European cuisine, but also his ability to produce a world-class standard of food consistently for both small and large-scale events.

“In addition to James’ experience as a top tier chef, it was his emphasis on sourcing superior quality local produce that made him stand out to us,” said Doltone House managing director, Paul Signorelli. “Ultimately the Darling Island project is all about being green, and James’ youth, passion and food philosophy marry perfectly with our vision.”

“Like Doltone House, the ‘function food’ concept is not in my vocabulary,” said Viles. “My focus is always on ensuring the highest possible standard of meal is achieved for every single guest.”
