Hayden’s obsession with food was honed by modern Australian culinary legend, three hat chef Peter Doyle. The master trained the apprentice at Cicada then snapped him up for his Celcius Restaurant. When Peter was head hunted by the Merivale Group to establish the three hat restaurant, Est, Ellerton moved with him.
Hayden now heads the kitchen at Belinda Franks Catering and is making his mark on the Sydney event and catering scene.
