New Zealand’s Otahuna Lodge

For the first time this year, following its July 11 re-opening, Otahuna Lodge will be hosting a series of practical cooking classes with Executive Chef Jimmy McIntyre.

The classes will offer a maximum of ten guests the chance to learn first-hand cooking secrets and techniques. Each class includes a visit to Otahuna’s gorgeous potager gardens, a 90-minute cooking lesson with Jimmy in the Lodge’s kitchen, lunch with matched regional wines and recipes for all the dishes prepared during the class. The cost is NZ$195 per person.

Jimmy has been the executive chef at Otahuna Lodge for 8 years. His “potager to plate” philosophy utilises the freshest ingredients, drawing upon the year-round selection from Otahuna’s two-acre, organic potager garden. Jimmy is a regular columnist and his recipes have appeared in top end New Zealand and Australian food titles.

Hall Cannon, owner of Otahuna Lodge says: “We are delighted that after re-opening in July, we will be able to share the delights of Otahuna’s food experience with guests who are able to enjoy the Lodge for just a day. We anticipate a strong take up as Jimmy has a reputation for producing beautiful dishes using the very best of fresh, local New Zealand produce.”

The classes will run from July through to September and include the following themes:

The Stress-Free Dinner Party
Thursday 21 July, Saturday 23 July
This class is designed to help you organise an impressive dinner party menu. The dishes will incorporate simple ingredients and easy methods in order for you to better prepare for an enjoyable and stress-free night.

Pasta & Risotto
Thursday 18 August, Saturday 20 August
Learn the how-to for making pasta by hand and using a press in this hands-on class. You will learn how to make different varieties including pappardelle, tortellini and gnocchi plus a range of sauces; Jimmy will also run through the basics of making a great risotto.

Canapés
Tuesday 20 September, Thursday 22 September
This class will teach you the art of creating these beautiful bite sized snacks. You’ll be able to create an array of canapés, both savoury and sweet, learning the best combinations of flavour and how to present them.

Otahuna will also be offering private dining by Jimmy McIntyre in the Lodge’s gorgeous formal dining room this winter for groups of up to 14 people. Private dining will offer non-resident guests the opportunity to sample fresh seasonal cuisine in Otahuna’s opulent formal dining room. The dining room is panelled in rich dark wood with a beautiful antique dining table alongside the room’s original floor-to-ceiling sideboard.
