New restaurant and bar coming to The Langham, Sydney

A new restaurant and bar is headed for luxury hotel, The Langham, Sydney, with an opening slated for mid-April 2024.

Etymon Projects is partnering with The Langham, Sydney, in Millers Point, to refurbish the hotel’s existing restaurant and bar spaces.

“The Langham, Sydney evokes the kind of timeless luxury seen in Europe’s most beautiful hotels and we’re thrilled to partner with this spectacular property,” says Etymon Projects CEO Lisa Hobbs.

“We see incredible opportunity in hotel dining and bars here, and believe The Langham, Sydney’s classic beauty and location will help set the scene for our team to deliver a very special experience for Sydney.”

Etymon Projects is behind other Sydney venues Poetica, The Charles Grand Brasserie & Bar, and Loulou Bistro, Boulangerie and Traiteur.

“The concept [of the restaurant and bar at The Langham, Sydney] is inspired by the relaxed and attentive service of great restaurants found in iconic luxury hotels in Europe, with a touch of the welcoming French, Italian and Spanish Mediterranean coast,” says Etymon Projects’ director of culinary, Sebastien Lutaud.

“The centre of the restaurant will feature a striking seafood bar with bar stools to sit with a glass of wine and enjoy a deliciously fresh crab omelette made in front of you.

“While a beautiful space, the restaurant will be very approachable and a destination for Sydneysiders as well as visitors.

“The location and surrounds of The Langham, Sydney are a perfect backdrop.”

The new restaurant and bar’s names and team, including the head chef, will be announced in coming weeks, and the venue promises an expansive wine selection.

“The restaurant wine program will highlight Australian and New Zealand classics alongside fantastic varietals from the Mediterranean coast, including Italy, south of France and Spain,” says Etymon Projects’ director of wine, Paolo Saccone.

“We want to create a lounge bar that rivals the great hotel bars of Paris, London and New York – a luxurious but relaxed and approachable bar where vintage spirits and cocktails are the hero.”

Etymon Projects will also operate The Langham, Sydney’s room service and functions and events menus.

“The Langham, Sydney is a key hotel within the Langham Hospitality Group portfolio,” says Jeffrey van Vorsselen, regional vice president – operations, Pacific, at Langham Hospitality Group.
