Keystone opens The Champagne Room

Following on from the reopening of Gazebo and Manly Wine bars, The Keystone Group opened The Champagne Room at The Winery on Tuesday night.

Following on from the reopening of Gazebo and Manly Wine bars, The Keystone Group opened The Champagne Room at The Winery on Tuesday night.

The Perrier-Jouët Champagne bar, located on the upper level of The Winery, is the only venue in Australia to exclusively offer Perrier-Jouët’s Belle Époque 2006 by the flute or bottle.

The Champagne Room’s menu includes items like Calvisius Oscietra caviar paired with a flute of Perrier-Jouët or Champagne Mumm, a seafood brunch of freshly shucked oysters, Hervey Bay scallops and Cloudy Bay prawns. Those dining late can match their Champagne with a Black Angus scotch fillet, whole lobster tail or poached Skull Island prawns.

This opening follows on the heels of Manly Wine and Gazebo’s reopenings earlier this month.

Gazebo has been reimagined as a 1960s-style bar with two-person table-and-lamp perch benches outside and leather booths and dark wooden fixtures inside.

The outside bar serves Gazebo’s signature Chilcano de Pisco cocktail on tap, with Negronis and Martinis, draught and craft beers and ciders completing the casual-meets-luxe offering on the drinks side. Keystone sommelier Sarah Limacher has selected a succinct list of top Australian and international wines, while head chef Jason Dean (ex Pier and Gastro Park) retains an emphasis on community dining via contemporary dishes and share plates.

Keystone’s chief property and corporate development officer John Duncan said, “After eight successful years we are very excited to relaunch The Gazebo into this new chapter and to see its maturation into a sophisticated restaurant and great bar.”

Manly Wine

Manly Wine’s refurbishment has seen the bar fitted out in white-washed timber furniture with an all-day raw seafood bar added to the food offering. The indoor cocktail bar and snack menu includes items like a rosé spritzer on tap.

The Keystone Group creative officer Paul Schulte said, “We are very excited after five successful years to tide in a new chapter, and to see the maturation of Manly Wine into a sophisticated waterfront restaurant and bar. The Keystone Group is growing up, and we feel the relaunches of Manly Wine, Gazebo, and the opening of Champagne Room at The Winery highlights this important transition.”

Gazebo is located at 2 Elizabeth Bay Road, Elizabeth Bay NSW.

Manly Wine is located at 8 – 13 South Steyne, Manly NSW.

The Champagne Room at The Winery is located at Level 1, 285A Crown St, Surry Hills NSW.
