Catering trend: BLT in a jar


Combining two of the key trends in catering – mason jars and gluten-free – the BLT in a jar is a novel menu inclusion.

Caramelised Bacon Jam
1/2 kg smoked bacon
1 large white onion
1/4 cup brown sugar
1/4 cup garlic
1 tsp cayenne pepper
1/4 tsp cinnamon
1/4 tsp nutmeg
1/2 cups bourbon
1/4 cups maple syrup

Slow Roasted tomatoes
1 pt cherry tomatoes
1 Tbsp grapeseed oil
Salt and white pepper to taste

Romaine Aioli
1/2 cup mayonnaise
5 garlic cloves, pressed and pureed
juice of 1/2 lemon
1 tsp sugar
1 tsp Tabasco
1 cup chopped romaine
