Chef Peter Gunn and his team opened Ides, a 36-seater restaurant, in Collingwood last night.
After spending nine years working in Victoria’s most acclaimed restaurants including The Royal Mail at Dunkeld and Attica, Ides is Gunn’s very first restaurant.
The single menu will offer six courses (four savoury and two sweet) with alternatives for dietary requirements. Wines and drinks will be matched to Ides menu by sommelier/ restaurant manager, Raffaele Mastrovincenzo.
The menu at Ides will include dishes like orange tomatoes and green olives, a dish that contains apple vinegar soaked currants, sea blight, green olive sauce, sliced pickled chilli and olive plant or pork neck and fennel, pumpkin and watercress served with a BBQ pumpkin sauce, chorizo paste, watercress, toasted fennel seeds and anise vinaigrette. Pineapple cooked in maple syrup served with ginger ice cream and mint will be typical of the desserts.
Celebrating small producers and wineries, Mastrovincenzo’s wine selection adapts daily to Peter Gunn’s ever changing cuisine and often the wine itself can become an inspiration for a dish.
The team at Ides will also continue to challenge itself by introducing ‘One Day Sunday’– a selection of monthly dinners that will have no association with the usual restaurant offering. Once a month, on a Sunday they will reinvent the whole venue and create a totally different dining experience.
