Make way for Melbourne's Mahjong Black

[Mon 27/06/2011 10:19:24]

Sophiticated, modern and authentically Cantonese, Mahjong Black combines contemporary decor, quality local produce, experienced staff, and an elegant atmosphere to become the new buzz on Little Collins Street in Melbourne's CBD precinct.

Head Chef, Wah Fung, Mahjong Black’s à la carte
menu is carefully crafted and transcends
the traditional Yum Cha

Opened in late 2010, Mahjong Black is the second restaurant in young entrepreneur, Max Tsang’s portfolio. Tsang opened Mahjong on Fitzroy Street, St Kilda in 2007 which has been highly successful and quick to develop a loyal customer base.

Created by Head Chef, Wah Fung, Mahjong Black’s à la carte menu offers contemporary Cantonese cuisine utilising quality produce sourced from Footscray markets and selected producers.

Entrées range from Mahjong Black’s signature dish, a Chinese donut stuffed with cumin spiced lamb to Peking chilli duck dumplings, mini chicken san choi bao served with plum sauce and the delicious steamed silky egg with scallops. All entrées are reasonably priced and generous portion sizes.

Inspired main courses comprise of stir fried blue swimmer crab with black pepper butter sauce served on crispy vermicelli, chilli plum crispy duck with pickles in chilli plum sauce, succulent Singapore chilli prawns with rice noodles and fresh fish of the day steamed or fried to your liking. For the vegetarian, there is a silky steamed tofu with Chinese broccoli and light soy, other vegetarian dishes are available on request and the arrays of side dishes beautifully compliment the balance of the menu.

Desserts are not forgotten in Tsang’s menu. A crowd puller would undoubtedly be the Mahjong Back sticky rice with coconut milk and the sublime mango pearl – a delightful combination of mango and tapioca.

Mahjong Black transcends the traditional Yum Cha with its offering of individually prepared a la carte dishes. In addition, a sumptuous 12 course degustation menu is available for two or more people with consideration for chef’s suggestions and special dietary requirements. The thoughtful and carefully chosen wine list created by The Wine Guide’s Dan Sims and Ben Edwards marries perfectly with Mahjong Black’s Cantonese cuisine.

Mahjong Black is truly eye catching with its sophisticated exterior and interior design. Tsang commissioned leading architect Petro Giordano from CBG for the interior design. “A design that compliments a fine dining experience by creating an interior that reflects a sense of mystery by combining a balance of sophisticated textures, tones, space and light“ says Giordano. The interior of dramatic black glass mirrored windows and walls, polished dark grey concrete floors, fibre optic lighting and state of the art wave ceiling lights showcase an elite Shanghai style restaurant. The restaurant provides comfortable seating and crisp white linen on the tables throughout. .

Mahjong Black will showcase three of its signature dishes at Taste of Melbourne to be held at the Royal Exhibition Buildings Carlton from 15- 18 September 2011.
